Sprouting Seeds for a Garden in a Term
If space and time are lacking, or simply for a quick exercise, try sprouting
seeds that germinate and can be harvested in just 2-7 days. Many garden
centres, catalogues and even grocery shops stock seeds in clear trays,
about the size of a cake or shoe box, that provide the humid
atmosphere in which to germinate seeds to be eaten as sprouts. These
seeds include white mustard, mung beans, lentils, broccoli, beets, basil,
alfalfa and cress.
Each sprout has a different taste and is full of an abundance of minerals
and vitamins, often in greater concentration than in more mature plants
of the same variety. Try them in salads, on sandwiches or as a soup garnish.
